The most likable change in the weekend menu is the soft and fluffy idli made with suji/ rawa and served with coconut chutney. It is my favorite breakfast and I love to have it with Coconut Chutney or an idly fry with Tamarind chutney. Idli can also serve as a healthy option for kids and can even be given to toddlers.  It can also be taken with sambhar and gun powder tomato chutney.

Idli, apart from being the easiest dish to prepare is also healthy and often opted by people who are following a diet and is famous among health conscious people. Idli can be made with suji/ rawa, ragi, oats, poha and bread. These can be either be naturally fermented or an external agent like Eno/ baking soda is used to make it more fluffy.

We can make a variety of idlis but I have shared mixed vegetable (carrot and coriander) idli because I thought that this will more filling than the regular plain idlis.

  • 1 cup Suji/ rawa
  • 1 cup Curd
  • 1/2 tsp ENO/ Baking Powder
  • 1/4 tsp salt
  • 1/2 cup grated carrot
  • 1/2 cup finely chopped coriander
  • 1/2 cup water (optional)
  • 1/2 tsp ghee (for greasing)

  • 1/2 tsp ENO/ Baking Powder
  • 1/4 tsp salt
  • 1/2 cup grated carrot

  • 1/2 tsp ghee (for greasing)
Instructions
For Roasting the rawa/ ghee
  1. Heat the pan and add rawa/ suji to it
  2. Roast the suji till the time it turns slight red/ brown. This will take hardly 2 minutes.
  3. Remove it from the flame.
For making the idli batter
  1. Remove the roasted rawa from the pan to a bowl.
  2. Add curd, salt and ENO powder to it.
  3. If the consistency is thick, you can add 1/4 cup of water to it. Since suji absorbs water, you might have to add it.
  4. Next grease the idli moulds with oil/ ghee.
  5. Pour the batter in each mould and above it add the grated carrot an coriander.
  6. You can alternatively also add these grated and chopped vegetables to the batter.
  7. Since I have used microwave, it will take only 4 minutes to cook them.
  8. You can also cook it over flame using a cooker or steamer. It will take some 10 minutes to cook.
  9. You can check whether it is cooked or not by using a tooth pick. if after pricking it comes out clean, then the idlis are cooked.
  10. Serve hot rawa idlis with coconut chutney.
