How to make kulcha | kulcha recipe | kulcha on tawa
Amritsari kulchas are very famous and my personal favourite. I have tried making kulchas many times in different variations like the plain kulchas, paneer kulchas and aloo kulchas. Kulchas can be made in tandoors , grillers and tawa. I have always made kulcha on tawa.
Kulchas are normally served with Amritsari chhole but since my childhood I have seen kulchas being served with matar ki chhat on the streets of Delhi. So, I always make plain kulcha with white matar.
For making these kulchas, we can add baking soda but along with baking soda we can also add baking powder to lessen down the soapy smell of baking soda.

Ingredients
- 2 cup Maida (all purpose flour)
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 3 tbsp curd/ yogurt
- 1/2 tsp Sugar
- 1/2 tsp salt
- 1 tbsp ghee
- 1/2 tsp kalonji
- 1 tbsp finely chopped coriander
- 1/2 cup water

Instructions

In a deep mixing bowl add all the ingredients – maida, salt, sugar, baking soda and baking powder , oil and curd.

Next add to it water and start kneading the flour.

Knead the flour soft and fluffy.

Cover the flour with wet kitchen towel and let the batter ferment for 2 hours.

After two hours, remove the wet kitchen towel and knead the flour again by dusting some maida over it.

Take a small ball of maida and start rolling round it the help of a rolling pin.

Now sprinkle some kalonji and fresh chopped coriander over it and gently roll it with a rolling pin. The kulchas should not not be too flattened and should be small in size.

Heat the tawa and put the kulcha over it. Flip the kulcha after it is cooked from 1 side.

You can also cover it with a lid on the tawa for a soft kulcha.

You can also apply butter/ ghee while flipping.

Serve the hot kulchas with matar ki chhat or Amritsari chhole.
